Buying a beef share is an excellent way to secure high-quality meat at a lower price. When you buy a share, the "take-home" weight (the actual meat you put in your freezer) is typically 60% to 65% of the hanging weight due to the removal of bones, water loss during aging, and trimming. The hanging weight is approximately 60% to 65% of the live weight. Regardless of the share size, the variety of the animal remains relatively identical.  

🥩 The Standard Cut Breakdown

A typical animal breaks down into three main categories of meat, irrespective of the share size: 

  • 40% – 45% Ground Beef & Stew Meat: High-quality, lean ground beef, burger patties, and stew cubes.

  • 30% – 35% Roasts & Slow-Cooking Cuts: Harder-working muscles that are incredibly flavorful when braised.

  • 20% – 25% Premium Steaks: High-end, tender cuts for grilling or pan-searing.

 

📌 1/4 Beef Share (The Starter Option)

Because a quarter share is physically split with another buyer, you generally cannot customize the cuts, and things like the brisket or flank steak will be split in half. 

  • Ground & Stew: ~45–55 lbs Ground Beef, 2–3 packs of Stew Meat.

  • Roasts: 2–3 Chuck Roasts, 1 Rump Roast, 1 Sirloin Tip Roast.

  • Steaks: ~6 Ribeyes, ~6 T-Bones (or NY Strips), ~3 Sirloin Steaks, ~2–3 Filet Mignons.

  • Extras: 1/2 Brisket, 2–3 packs of Short Ribs, Soup Bones. 

 

📌 1/2 Beef Share (The Sweet Spot)

A half beef represents one complete "side" of the animal. This gives you the freedom to choose your steak thickness and opt for specific cuts (e.g., turning a Prime Rib section into steaks or keeping it as a whole holiday roast). [1, 2, 3, 4]

  • Ground & Stew: ~90–100 lbs Ground Beef, 4–6 packs of Stew Meat.

  • Roasts: 5–6 Chuck Roasts, 2 Rump Roasts, 2-3 Sirloin Tip Roasts, 2 Arm Roasts.

  • Steaks: 12–14 Ribeyes, 10–12 T-Bones, 6–8 Sirloin Steaks, 4 Flank/Skirt Steaks.

  • Extras: 1 Whole Brisket, 5–6 packs of Short Ribs, 5–6 packs of Soup Bones.

 

📌 Whole Beef Share (The Ultimate Stock-Up)

A whole beef provides double the quantities of a half beef. It allows for maximum customization—including keeping highly sought-after, single-occurring cuts intact like the Hanger Steak, Tri-Tip, and Flank Steak without having to compromise with a co-buyer. [1, 2]

  • Ground & Stew: ~180–200 lbs Ground Beef.

  • Roasts: 10–12 Chuck Roasts, 4 Rump Roasts, 4–6 Sirloin Tip Roasts.

  • Steaks: 24–28 Ribeyes, 20–24 T-Bones, 12–16 Sirloins, all flank, skirt, and specialty hanger steaks.

  • Extras: 2 Whole Briskets, 10+ packs of Short Ribs, extensive Soup Bones, and organ meats (liver, tongue, heart) if desired.
